It is much cooler here than it has been for the past month and a half, and many people were getting snow or heavy cold rain for Earth Day. What do you do on chilly days that not only warm you physically but also emotionally?
Besides hot cocoa, hand made blankies and sweaters warm the body and soul in my home.
And then there is soup. So many recipes. So little time to try them all. Right now I have carrot soup on the stove. Adding a grilled cheese sandwich to this pretty and tasty pot of comfort food makes it a complete meal.
I wanted to post a photo of a bowl of this soup so you could see how pretty it is. It is such a good way to get your kids to eat some vegetables in a different way. However, I cannot find my camera. I hope I didn’t leave it at my friend’s house. Wouldn’t be the first time I have left some of my stuff when I have been visiting!
Anyway, here is the recipe: (I have modified the original recipe that my mom gave me a few years ago. The amount of fat and salt have been cut WAY back!)
Carrot Soup
8 Tbsp butter (I use unsalted. Melt in large stockpot.)
3 large onions, chopped
16 carrots, peeled and sliced (add carrots and onions to melted butter and cook until onions are translucent.)
2 quarts chicken stock (I use low sodium) – (add to stockpot and let onions and carrots simmer about 1/2 hour or until carrots are cooked but not mushy.)
Puree soup. Then add the following and heat through but don’t boil:
1 1/2 c. Plain Greek Yogurt
1/2 c. milk. (I use skim)
Add salt to taste, along with freshly ground black pepper and garnish with
chopped chives.
When I find my camera, I will add a photo!
Here are My 3 Things:
1) All of the ingredients for this soup were in my cupboard or fridge. I do like a nicely stocked pantry!
2) All of my laundry dried in the breeze gusty bursts today. I didn’t think it would dry in just one day!
3) I was warm and toasty today when I know that many people were battling with really cold temps as they were dealing with unexpected snow. I hope you all could find a warm place to stay.
You did it again! A friend had left me with about 30 carrots which I shared with my daughter but that left me half and “walla” along comes your recipe. I had all the ingredients (veg broth instead of chicken) and no yogurt so I put in extra almond milk and it is delicious. Thank you so much. It did get chilly down here but it’s suppose to be back in the 80′s by Thursday so that usually means it will be warm up north as well.

2) Unexpected conversation with a friend tonight that might lead to my next job.
3) My basil and tomatoes are doing great and so is my cat (Harriet’s) grass. Being an indoor cat, she just loves her little patch of indoor grass.
